Eat! La Vida Mexican Style Mac & Cheese with Uncured Bacon

The Bellisio Foods family of brands is a little hard to keep up with. It includes everything from Chili’s to Atkins to Michelina’s. But there’s a lesser-known brand among those, which simply calls itself Eat!

Eat! has a fairly small line-up of products, and at the time of this writing not a single one of them is vegetarian friendly. So we decided to run the Mexican Style Mac & Cheese with Uncured Bacon by our non-vegetarian Freezer Meal Frenzy staffers to see how it tastes.

Well, unfortunately the results weren’t great.

Let’s just tackle the biggest flaw right away: this dish is incredibly bland. No matter what’s in your mouth, your taste buds will be struggling to find any flavor at all.

This is largely due to the mediocre cheese sauce, which is supposedly a blend of cheddar, romano, milk cheese cultures, and half and half, but it doesn’t really matter because there’s not a lot to taste. The sauce is also quite a bit too watery, which doesn’t do this dish any favors.

There are chunks of uncured bacon and peppers in the mix as well, but those are surprisingly flavorless as well. The peppers do have a little bit of an aftertaste, but you’ll hardly taste them when you’re actually chewing on them.

The bacon, which should have been the centerpiece of this dish, has maybe a slight bit of flavor, but only if you isolate the bacon pieces from the rest of the goop and squint your eyes really hard.

The bottom line: we were sadly disappointed by what seemed like an exciting discovery. There are several better budget-friendly ways to satisfy a good mac and cheese craving, so Eat! La Vida’s offering is a little bit unnecessary.
