Some frozen meals are elevated — or salvaged — because of one special ingredient. That ingredient takes an ordinary microwave dinner and transforms it into something awesome. A meal that might have been bland is suddenly bursting with flavor; a dish that might have been boring becomes exciting and fresh.

The Casserole Chile Relleno, which is a new gluten-free addition to the Amy’s Bowl line, works because of its pablono peppers. Thanks to the slight kick that the mild chili pepper provides, this dish is both appetizing and memorable.

Of course, the pablono peppers aren’t the only thing that this meal has going for it. The helpings of Monterey Jack and white cheddar cheese are plentiful, and the small pieces of tofu add some texture to this dish. The one thing that doesn’t work are the organic tortilla chips. When prepared in a microwave, the chips are soft and gooey rather than crunchy. If you cook this meal in an oven, you might be able to avoid this problem.

All in all, this is a spicy and satisfying addition to the Amy’s lineup. Thanks to the cheese, it’s a little high in fat, but the healthy ingredients make this a fairly healthy frozen meal.
