Evol offers several varieties of street tacos, but only one of those options is vegetarian friendly: the Sweet Potato, Black Bean & Goat Cheese Street Tacos. Thankfully, these tasty little tacos don’t disappoint; they’re sure to please vegetarians and meat eaters a like.
There are a lot of flavors at work in these tiny tacos: mashed black beans, big chunks of sweet potato, diced jalapeno peppers, and of course, goat cheese. Surprisingly, none of these flavors works against any of the others. They all blend together nicely into a satisfying dish.
When you’re eating frozen dishes, the texture of the tortilla can sometimes feel a bit off. However, these tortillas still taste very fresh. They’re not overly chewy, but they’re still hard enough to keep the taco filling in place.
The least essential component of this dish is the salsa verde, which is served on the side. The flavor is fine, but it doesn’t really add anything to the dish. The tacos are already seasoned with a basic lime and corn salsa; the salsa verde feels a bit like overkill.
These tacos are definitely a treat, but they’re not a very substantial meal. If you eat them on their own, there’s a good chance you’ll still feel hungry after the last bite. That said, if you’re looking for light lunches or something to serve with a side dish, these low-calorie tacos are full-flavored choice.
