The key to making this burrito work is to cut calories without hurting the flavor. Egg whites are an obvious choice, but perhaps less obvious is the decision to drop pork from the sausage in favor of turkey. This is a decision that really pays off. The turkey sausage is delicious, and it has just a little bit of spice to it. Then there are chunks of roasted Russet potatoes to make the filling a bit heartier.
