Amy’s Kitchen has come up with a solution to this dilemma. With their Breakfast Scramble, they’ve created an exceptional vegan-friendly breakfast that puts all kinds of flavors onto your plate.

For our money, the tofu scramble is the highlight of this dish. Amy’s nails the texture of the tofu, and the mushrooms and broccoli are absolutely delicious. We’d be more than happy to eat this scramble on its own.

That said, the potatoes and sausage are appetizing as well. Some vegetarian sausages try too hard to mimic the taste and texture of meat. Amy’s has gone in different direction here, creating a sausage that’s crumbly and slightly sweet. The potatoes are a bit bland when consumed on their own, but they’re fantastic when combined with any of the other ingredients. If you spear potato and sausage on your fork at the same time, you’re in for a treat.
