While we don’t love every Amy’s dish we try, we’re continually impressed by the high quality of their ingredients. You can’t tell their rice was ever frozen, and you can’t tell that their vegetables were reheated in the microwave. Every ingredient that they use tastes completely fresh.

Amy’s Thai Red Curry definitely plays to the brand’s strengths. It offers a wide variety of delicious veggies, from green beans to bell peppers to butternut squash. It includes plenty of tofu, which Amy’s Kitchen always uses well. It’s a simple dish that’s full of flavor, and it’s an excellent choice for fans of sweet curry.

While we highly recommend this vegan microwave dinner, it may not be the right choice for every diner. One of our staff members dislikes coconut milk. If you share their aversion, you might want to pass on this meal. But if you enjoy the taste of coconut, you should definitely sample this curry for yourself.

We love Amy’s Kitchen, and we’re a huge fan of their frozen curries. We’ve tried their Green Curry as well, and we were just as impressed. All of the ingredients in this meal are top-of-the-line, and the finished product is mouthwatering.
