Let’s get one thing out of the way: Amy’s Light & Lean Black Bean & Cheese Enchilada isn’t the best enchilada in the Amy’s Kitchen lineup. If you want an amazing enchilada, we’d recommend the Roasted Poblano over this one. That said, this is a great low-calorie meal. This enchilada may be “Light & Lean,” but it’s still got some flavor to it.

If you’re put off by the picture below, you can relax; this dish is much better than it looks. The rice may look a little mushy, and the enchilada sauce looks kind of gross, but the flavor and texture of the meal is more than fine. The enchilada sauce is probably the best part of the entire meal. The tiny chunks of organic jalapeno pepper give it a nice kick.

The rice and vegetable mixture is fairly simple, but it’s nicely seasoned. Even with the seasoning, it’s not very spicy, which makes it a nice counter to the enchilada sauce. The enchilada filling is creamy and smooth. The cheese filling has a little less cheese than we’d like, but it’s pretty tasty for a low-fat meal.

We haven’t loved every dish in the Amy’s Light & Lean lineup, but this is a meal we’d be willing to try again. At only 250 calories and 5 grams of fat, this is a Mexican meal that any dieter would love.
