The Freezer Meal Frenzy staff loves a good mac n’ cheese; there’s not a frozen macaroni dish we won’t try. While we’ve definitely sampled some exceptional dishes, not every meal lives up to our high standards. We wanted to like Amy’s Light & Lean Macaroni, but it was missing all the things we love most about this classic dish.

A low-fat, low-calorie take on mac and cheese sounds great on paper, but it’s not that appealing when it’s sitting on your plate. While the texture of the macaroni noodles was perfectly fine, the cheese sauce definitely felt off. There was a strange grainy quality to it; it almost felt like box mix.

To make things worse, the sauce was practically flavorless. We heated up this meal because we were in the mood for cheese; what we got tasted more like noodles served in a bland-as-can-be sauce. A little bit of seasoning might have improved the dish, but we don’t typically season microwave meals.

If you’re trying to cut back on calories and you’re desperate for some macaroni and cheese, this dish probably isn’t going to curb your cravings. It’s just not cheesy enough to satisfy the average macaroni fan. Pass on this meal and try another healthy macaroni dish, like Good Food Made Simple’s Hatch Chile Mac instead.
