We love Evol’s burritos, and their street tacos are great too. Straying outside of what Evol does best to check out some of their other dishes, however, tends to be hit or miss. So we approached the Chicken Enchilada Bake with cautious optimism. After all, a company so skilled at delivering other frozen Mexican-themed foods should be able to handle an enchilada bowl no problem, right?
As it turns out, yes. Evol does make a pretty killer enchilada bowl.
Now, this dish certainly doesn’t come out of the microwave looking like the delicious meal pictured on the box. It actually looks a bit like something you’d find on the sidewalk outside a bar on a Sunday morning.
But don’t let its look (or our disgusting analogy) deter you from giving this one a try.
The cooked cilantro lime chicken is delicious, and it definitely has a little bit of lime zing, which we tend to enjoy. The tortilla shells you’ll find hiding under the layer of cheese sauce is pretty delicious too, with a bit of an authentic flavor much like that of the street taco shells. Beneath all that you’ll find corn, rice, and pinto beans.
It doesn’t have a verde sauce or anything like that, though it ends up being a bit creamy anyway thanks to the cheese sauce. And there are hints of jalepeño for just a touch of spice.
So yes, Evol’s Chicken Enchilada Bake is a winner. It’s the sort of frozen meal that will have you scraping the sides of the dish so you can enjoy every last bite.
