The Freezer Meal Frenzy staff just can’t resist frozen lasagna. Whether it’s made with bechamel sauce or butternut squash, microwaved lasagna is a dish we always enjoy. We were thrilled when we saw Amy’s Tofu Vegetable Lasagna in our freezer aisle, and once we cooked it up, this dish definitely lived up to our expectations.

The spinach, zucchini, and tofu all shine. Spinach doesn’t always work in microwave dinners — more often than not, it’s either too wet or too dry. Thankfully, the spinach here is soft without being slimy. The zucchini is flavorful and buttery, and the tofu is perfectly seasoned; it has a nice meaty quality to it.

While we’re big fans of Amy’s standard pasta sauce, this sauce is a bit spicier than what we’re used to. You can really taste the garlic in the sauce. The extra kick compliments the tofu beautifully. Although this lasagna uses imitation mozzarella, the cheese still has a terrific flavor and texture. If you’re lactose intolerant, you should absolutely give this meal a try.

We’re big fans of frozen lasagna, and we absolutely adored Amy’s Tofu Vegetable Lasagna. It’s a delicious, unusual take on lasagna that doesn’t taste like a microwave meal at all. Don’t let the presence of tofu scare you off; this is a lasagna that anyone should enjoy.
