We love frozen lasagna, and we love Amy’s Kitchen. Naturally, we were excited to try Amy’s Garden Vegetable Lasagna. Although this isn’t quite as great as Amy’s amazing Tofu Vegetable Lasagna, it’s still a pretty tasty meal. If you’re not a fan of tofu or would prefer to avoid gluten, this meal is a pretty good option.

The gluten-free lasagna noodles are definitely the weakest part of the dish. They’re a bit tough, which makes them difficult to slice with a fork, and they’re a little too chewy. Although Udi’s gluten-free lasagna has similar issues, we found it to be more appealing overall. Aside from that, however, the dish is amazing. While the sauce may not look appetizing, it tastes delicious.

The highlight of this dish, however, is the filling. There’s a great mix of veggies here, from organic spinach and carrots to broccoli. The delicious ricotta cheese enhances all of these flavors. The dish is topped off with plenty of Parmesan cheese. Light seasonings like basil and cane sugar make this dish taste even better.

This isn’t the best frozen lasagna we’ve tried, but it’s still a pretty great dish. If you’re looking for a vegetarian and gluten-free take on a classic lasagna, this is one of your best options. At only 290 calories, this filling meal is also an excellent option for dieters.
