If you’re seeking the best frozen lasagna on the market, Amy’s Light & Lean Spinach Lasagna is not the dish you’re looking for. It doesn’t compare to Amy’s Tofu Vegetable Lasagna, nor does it measure up to Evol’s Butternut Squash Lasagna. However, if you’re hunting for a diet-friendly lasagna, this dish might be right up your alley.

This isn’t an exceptional lasagna, but it is an adequate one. The tomato sauce has a pleasant taste, and the texture of the lasagna noodles is absolutely perfect. There’s even a healthy helping of mozzarella and parmesan cheese sprinkled on top. It has many of the qualities you’d expect from a great frozen lasagna.

Unfortunately, the dish drops the ball on the spinach. There’s too much spinach in the lasagna, and the quality of that spinach isn’t great. It has the stringy, mushy taste of overcooked spinach. The ricotta cheese and sauce mask some of that unpleasantness, but it really takes away from the dish.  In fact, the spinach was so overpowering that we couldn’t even taste some of the other ingredients in the dish, like the organic mushrooms. Amy’s uses spinach quite well in some of their other dishes; we’re not sure what went wrong here.

It’s hard to recommend this dish; there are better options when it comes to frozen lasagna. Still, if you’re trying to cut calories from your diet, this meal might be something you want to take a look at. The dish is only 250 calories, and it’s very filling for a microwave meal. If you can get past the spinach, this meal could help you keep your diet on track.
