Lean Cuisine Mango Chicken with Coconut Rice

When it comes to Asian-inspired stir fry dishes, Lean Cuisine’s track record isn’t great. Their Chicken Teriyaki Stir Fry is a complete mess, and their Orange Chicken is simply forgettable. So we went into the Lean Cuisine Mango Chicken with Coconut Rice hoping for the best but expecting the worst.

While this wasn’t the worst of Lean Cuisine’s stir fry dishes, it’s a pretty skippable frozen meal.

Lean Cuisine’s chicken can be pretty hit or miss. We found the chicken in this dish to be surprisingly better than most of the other Lean Cuisine chicken dishes we’ve tried. Our one complaint is that much of it was too gristly in a way that prevented the meaty parts from having that nice, melt-in-your-mouth consistency.

The sauce is probably the best part of the dish. While it won’t blow any minds, it has a nice, sweet mango flavor and just a little bit of bite.

Unfortunately, the coconut rice–which makes up a good two thirds of this meal–is about as bland as can be. Lean Cuisine tried to make up for it by scattering in some veggies, but the edamame beans are dry and flavorless, while the bell peppers are too few and far between to really add anything. The best you can do is hope there’s enough sauce left over to drown the rice in it. Or you can just skip the rice altogether, which might be the smartest route to take.

We’ve never been fans of Lean Cuisine’s Stir fry dishes, and the Mango Chicken with Coconut Rice certainly isn’t going to change our minds. Needless to say, we’re not the least bit troubled that this is a “Limited Edition” dish. We won’t miss it when it’s gone.
