Kashi’s Amaranth Polenta Plantain Bowl probably isn’t for everyone. To some, the idea of combining plantains, a cooking banana, with chili sauce may seem downright horrifying. However, if you’re not put off by these unusual flavor combinations, this bowl might just blow you away.

This frozen food doesn’t look that appetizing when it comes out of the microwave. As you can see in the image below, ours looked like a pile of mush. Thankfully, it tastes a lot better than it looks, largely because of the top-quality ingredients. It’s hard to believe this is a microwaved meal. Everything in it — from the plantains to the roasted sweet potatoes — tastes incredibly fresh.

We were a little worried that microwaving would make the plantains mushy, but our plantains actually had the perfect amount of softness. In fact, all of the ingredients in the meal were cooked perfectly. Even the kale had a pleasantly chewy texture to it.

This is the kind of meal that needs to be carefully stirred before eating. It’s a delicate blend of sweet and spicy flavors, so if the ingredients aren’t mixed properly, certain flavors could become overpowering. When everything is stirred, the flavor combination is to die for. Even if you’re sensitive to spicy foods, you should be able to eat and enjoy this bowl.

We loved everything about this light vegan dish, especially the plantains. This low-calorie meal won’t thrill every eater, but for the right person, it could become a lunchtime staple.
