Amy’s Santa Fe Enchilada Bowl Review

Amy's Santa Fe Enchilada Bowl

We don’t always enjoy frozen Mexican food, but we trust Amy’s Kitchen to deliver tasty Mexican meals. Amy’s makes a point of using fresh, high-quality ingredients, which makes their meals stand out in a good way. If you’re craving some south-of-the-border cuisine, the Santa Fe Enchilada Bowl is a meal you’ll want to try.

While the word “enchilada” appears in the name of the dish, don’t expect a stuffed tortilla here. The dish is made up of layered ingredients, which makes it feel more like a Mexican-inspired lasagna. It’s a flavorful, slightly-spicy meal that’s easy to eat with a fork.

The combination of ingredients is really interesting. The crumbled tofu mimics the texture of ground beef, especially when it’s soaked in enchilada sauce. The mixture of pinto beans and white rice make this feel like an authentic Mexican dish. The enchilada sauce and jalapeno peppers definitely have a bit of heat to them, but this dish isn’t overwhelmingly spicy. The generous helping of Monterey jack cheese makes this a very easy meal to eat.

Even though the Santa Fe Enchilada Bowl is pretty tasty, it’s not the healthiest option in the Amy’s line. It’s gluten-free and high in fiber, but it’s also fairly high in sodium. If you love Mexican food and aren’t watching your sodium intake, this meal is worth a closer look.
