A nice, warm meal is a great treat when it’s cold out. So on this chilly February day, we’re trying out Trader Joe’s Ricotta & Spinach Tortelloni with Red Pesto. After a full five minutes in the microwave, this comes out nice and piping hot, so it’s the perfect thing to warm our tummies.
The first thing we noticed once we peeled back the top layer of the packaging was just how loaded with vegetables this meal is. It’s an ambitious dish, with zucchini and red bell peppers galore. It also doesn’t skimp on the cherry tomatoes.
With all these veggies, there’s no real sauce, per se. The vegetables sort of take over that role here. It’s an interesting choice, but one that pays off. This is a fresh, healthy-tasting meal. Now, there will be a bit of soupy liquid left over at the bottom of the dish, which is hard to avoid when you’re working with this amount of juicy vegetables.
The main event here is the tortelloni. It’s tender and filled with ricotta and spinach. Of course, not every piece is created equal — some are loaded up with ricotta, while others feel a bit empty. It all evens out, and the abundance of veggies does wonders to make the uneven tortellini feel like less of a sin.
We were pleasantly surprised by how robust this meal is. This one will really fill you up. Of course, the calorie count is no slouch, at 460 (220 from fat), but sometimes it’s just nice to feel full. Especially when it’s cold out. This also comes loaded with 700 mg of sodium, so you might want to stay away from this if you need to watch your sodium levels.
Trader Joe’s Ricotta & Spinach Tortelloni with Red Pesto is a great treat, though it’s not quite as healthy as it might taste. But it’s a generous portion and it’s loaded with vegetables, so it’s pretty hard to complain about this tasty dish.
