So Right Caribbean Inspired Chicken

Sometimes it takes a good Caribbean vibe to kick your day into full gear. So Right’s Caribbean Inspired Chicken is here to fill that particular niche in the frozen food world, so we figured we’d put on some Bob Marley and give this a try.

One detail in the cooking instructions seems a bit strange to us. We’re supposed to cook this for three and a half minutes, stir, and then cook for one more minute. However, the instructions say to “stir separately.” What does that mean? We understood it as stirring the chicken and sauce in such a way that it doesn’t mix with the rice at all, so that’s what we did. We’re still not sure if that was what we were supposed to do.

So what makes this a Caribbean-style meal? Well, we assume it’s the citrusy sauce and the subtle spice level that doesn’t hit right away but sort of lingers in the back of your throat and mouth after you’ve eaten a bite. It might seem pretty great when you hear it described, but it just doesn’t taste very good — it tastes kind of generic and plasticy.

The chicken is pretty disappointing as well. It’s chopped into small little bits, and those bits are hard, tough, and flavorless. They actually taste better when you soak them in the sauce. Of course, the sauce isn’t that great already, so you’re just using something mediocre to cover up something that’s really bad. It’s kind of a mess.

There are some peppers mixed in as well, but those are soggy and a bit gross. We only ate one or two pieces and threw the rest away.

While it doesn’t have a ton of flavor, we did enjoy the rice portion of this meal. It tastes like the authentic Jamaican-style rice we’ve had in the past, and it’s got some corn and black beans to liven it up a bit. This rice would make a great base for a better meat and a killer sauce.

The So Right Caribbean Inspired Chicken is better in concept than it is in reality. It really needs some better-quality ingredients to really live up to its true potential. But we’ll take any excuse we can get to listen to some Bob Marley, so that part of this whole experience wasn’t bad.

Oh, and did we mention that So Right meals come in cardboard trays instead of plastic ones?
