Originally, frozen dinners were designed to feed a single person. The first frozen dinners were served on airplanes in the early 1940s. Later in the decade, frozen meals started showing up in grocery stores. But nowadays, you don’t have to be eating alone if you want to enjoy a nice frozen meal. Amy’s Broccoli Cauliflower Pasta in Cheddar Cheese Sauce is specifically designed for two people to share.

We usually heat Amy’s meals in the microwave, but we cooked this dish in a skillet. It was a fast, simple process; we really didn’t have to do much more than toss the contents of the package into a skillet and serve. You could easily cook up this pasta and prepare a side salad at the same time.

This dish is very similar to Amy’s Broccoli & Cheddar Bake, which is a favorite of ours. Both meals have the same creamy, cheesy sauce, and both dishes offer perfectly-cooked, slightly crunchy broccoli. While we love the inclusion of cauliflower here, we’d have to say that the Broccoli & Cheddar Bake is the better of the two. It’s topped by a crispy sunflower seed meal that really enhances the texture of the dish. If you were to add panko crumbs to this meal, it should create a similar effect.

That said, if you’re looking for a comforting and healthy dish for two, this meal shouldn’t disappoint. There’s plenty of pasta here; half a bag definitely makes for a filling meal. Each serving contains 400 calories and 17 grams of protein, which means this is a dish that will really fill you up. Even though it’s packed with vegetables, the delicious cheese sauce should make this meal palatable to kids as well.
