Dr. Praeger’s has worked hard to make vegetables more appealing. We’re big fans of their kid-friendly Spinach Littles, and we really enjoyed their crisp and crunchy Broccoli Cakes. When we spotted Dr. Praeger’s Spinach Cakes, we hoped that they would be just as the box describes: unabashedly great.

We’ve found that veggie snacks of this sort are best when baked in the oven, so that’s exactly how we chose to cook them. It was a fast and easy process that didn’t require much time or effort. In approximately 10 minutes, we had a plate full of dark green spinach cakes to munch on.

If you’re expecting these spinach snacks to taste exactly like the Spinach Littles, you might be a bit surprised. These cakes contain a lot less potato and a lot more spinach. That’s not a bad thing — the spinach tastes fresh, and it has plenty of flavor — but it does change the overall taste and texture of the dish. There’s nothing masking the taste of spinach here, and these cakes are very soft. You could easily turn them to mush with your fork.

As long as you enjoy the flavor of spinach, these cakes are a versatile treat that can be enjoyed in a lot of different ways. You can treat them as a snack or a side dish, or you could even make them the center of your meal by serving them on a small bun. We love the idea of spinach sliders!
