Lunds & Byerlys Roasted Vegetable Lasagna

The Freezer Meal Frenzy staffers have never been shy about our passion for frozen lasagna. We love a good lasagna, and we can even enjoy a so-so one. The Lunds & Byerlys Roasted Vegetable Lasagna, however, might be the best frozen lasagna we’ve ever had.

Before we get into our review, however, we’d like to talk a little bit about this brand. This is the store brand for Lunds & Byerlys, an upscale supermarket chain located in our home state of Minnesota. They have a large selection of frozen goodies, and if you’re ever in the Minnesota area, you owe it to yourself to give their freezer aisle a closer look.

Like many frozen lasagnas, this dish takes some time to prepare. Although it comes with microwave instructions, we decided to heat it in the oven, which took more than an hour. We were ravenously hungry by the time our lasagna was done, but it was definitely worth the long wait. This is a homemade quality lasagna that’s filled to the brim with fresh ingredients. There are plenty of big meaty mushrooms, as well as juicy slices of roasted red pepper. Our lasagna noodles were perfectly cooked, and they really helped to hold this collection of ingredients together.

Even though we enjoyed the veggies and the noodles, there are two things that really set this lasagna apart. This lasagna is made with not one, but two sauces: a white sauce and a red sauce. The alfredo sauce is wonderfully creamy, and the tomato sauce is surprisingly spicy. The combination of the two flavors is something truly special; it’ll be hard to go back to eating single-sauce lasagna after this.

The other thing that makes this lasagna stand out is the cheese. It’s loaded with all kinds of cheese, from asiago to fontina to the classic ricotta. If you read the ingredients list, you’ll notice that the lasagna is described as containing a “cheese sandwich,” and we’d say that description is apt! Cheese is a welcome addition to any lasagna, and there’s no shortage of it here.

If you live near a Lunds & Byerlys, and you share our affection for frozen lasagna, Lunds & Byerlys Roasted Vegetable Lasagna is worth making a trip for. It’s raises the bar for vegetable lasagna. Even though we just polished off this meal, we can’t wait to dig into this lasagna again.
