If you’ve never seen the Lunds & Byerlys brand at your local grocery store, it’s probably because this brand is exclusive to the Lunds & Byerlys supermarket chain, which is based in Minnesota. They offer plenty of spectacular frozen dishes, and we’d definitely suggest giving their products a try.
The cooking methods for this soup are a little strange, but the process is fairly simple. You have to drop a plastic bag of frozen soup into boiling water and let it thaw for about 10 minutes. Once the soup is heated up, you give the bag a shake, cut it open, and dig in!
The flavor is absolutely amazing. The taste of carrots is strong, and it complements the ginger beautifully. Because this soup is made with coconut milk, it’s also terrifically creamy. It’s comforting, but not bland, and it’s delicious, but it still feels unique.
That said, this feels a little more like a broth than the kind of soup you’d have for a meal. We think it would taste great alongside a grilled cheese sandwich, and it would be even better with some ramen or soba noodles. This soup is definitely tasty enough to eat on its own, if you so desire; you just shouldn’t expect it to fill you up!
