The Freezer Meal Frenzy staff has never been afraid of vegetables. We adore fresh veggies, and we like them even more when they’re sitting atop a cheesy pizza. Trader Joe’s Organic Roasted Vegetable Pizza is loaded with squash and veggies, which makes it pizza perfection in our books.
Trader Joe’s recommends placing this pizza directly on the oven rack, but we ignored those instructions. In our experience, cooking a pizza right on the rack leaves you with a big mess. Instead, we placed it on a baking pan and left it in the oven for a few extra minutes.
As you can see, this pizza looks exactly like the one you see on the box. It isn’t massive, but it can easily feed two people, and it’s loaded with toppings. All of the toppings are tender when they came out of the oven, which makes the pizza much easier to eat.
Veggies might be the main feature here, but the cheese is still a standout. It’s made with both a cheese sauce and organic fontal cheese, which has a rich, buttery flavor. Some of the toppings, like the grilled eggplant, have an earthy flavor, which keeps this pizza from feeling overly decadent. There’s also a slight spiciness to the tomato sauce, which makes the pizza taste even more distinctive. It’s an unusual combination of flavors that we really enjoy!
This pizza would be a failure if the toppings were anything less than stellar. Thankfully, all of the veggies really deliver on the flavor front. Because the vegetables are roasted, they all have a strong flavor. The big slices of zucchini are our favorite, but we love the big pieces of pepper and onion too.
