No one on the Freezer Meal Frenzy staff follows a ketogenic diet, but we still appreciate substitutes for carbs. We eat a whole lot of mac & cheese and pizza; sometimes it’s nice to have some low-carb alternatives to balance everything out. Lunds & Byerlys Mixed Vegetable Spirals is the kind of product we’re always keeping an eye out for.
But wait, what’s Lunds & Byerlys? We’re glad you asked! It’s a Minnesota-based grocery store chain with a fantastic frozen food selection. If you ever happen to be in the area, we definitely recommend checking their products out.
As for these spirals, cooking them up isn’t too much of a hassle. When you take them out of the box, they’ll be in a large frozen clump. Thankfully, once you start cooking them on the stovetop, they’ll break apart fairly easily. Once all the water has evaporated from the pan, your spirals will be ready to serve.
This is nothing more than carrots and zucchini in a noodle-like shape, which means you’ll probably want to dress the noodles up a bit before you serve them. That said, you don’t have to do anything fancy. We just added a little bit of butter and pepper, and that was more than enough for us.
Of course, if you’d like to pair these noodles with your favorite marinara sauce, they’d make a great substitute for spaghetti. They definitely taste like the vegetables they are, but the flavor isn’t overwhelming. Unfortunately, they might not be the best option if you’re cooking for two. The spirals you see in the bowl above are all you get in a package.
