If you’re a Freezer Meal Frenzy regular, you know that we’re all about squash, especially when it’s in zucchini form. We love zucchini no matter how it’s sliced, but lately, we’re especially fond of spiralized squash. Since we don’t have our own spiralizer, we’re grateful for products like Lunds & Byerlys Zucchini Spirals.

If you’ve never heard of Lunds & Byerlys, you’ll want to look it up the next time you’re in Minnesota. This upscale supermarket chain is exclusive to the Land of 10,000 Lakes, and their store-brand frozen food line is pretty impressive. From quiche to soups to pizzas, they’ve got a little bit of everything.

Cooking these spirals isn’t tricky, but we wouldn’t call it effortless either. When you take the zucchini out of the packaging, all of the spirals are frozen together in a giant clump. You’ll have to spend some time breaking apart the zucchini hunk while it cooks on the stovetop so that you can get this meal ready to eat.

Zucchini has a soft, almost buttery texture, which is one of the things we love about it. That’s true even when you slice zucchini into spaghetti-like strips. We don’t necessarily mind that softness — it’s pretty close to well-cooked pasta — but we would have appreciated a few extra ingredients to add a bit of crunch to this meal.

If you’re torn between these zucchini spirals and the Lunds & Byerlys Mixed Vegetable Spirals, we’d have to advise going with the mixed veggies. We love the taste and texture of zucchini, but it lacks the natural crispness of carrots. The zucchini was still pretty appealing, especially after we added some butter and pepper, but the veggie mix is still the better option.

If you want to substitute squash for spaghetti, Lunds & Byerlys Zucchini Spirals is an easy way to do exactly that. While we personally prefer the mixed veggie spirals over the zucchini version, both options are appealing, especially if you’re trying to reduce your carb intake. Whether you pair these noodles with a nice sauce, top them with some crunchy nuts, or simply eat them plain, there’s a lot to enjoy here.
