The Freezer Meal Frenzy staff has never tried to conceal our passion for macaroni noodles covered in a creamy, cheese sauce. After all, our love for mac and cheese burns too brightly to ever be hidden. Luvo Roasted Cauliflower Mac & Cheese isn’t exactly a conventional macaroni dish, but we still wanted to give it a try.
Although this meal has oven instructions, we went for the simpler option and chose to cook this up in the microwave. The process is pretty fast — just a little over five minutes — compared to the 40 minutes you’d spent thawing this out in the oven. We had absolutely no issues with the texture of our pasta or our cauliflower, which means we can heartily recommend the faster microwave option.
Don’t let the presence of cauliflower fool you; this isn’t a low-carb dish. In fact, there are a whopping 55 grams of carbs in this dish. That said, this is a slightly healthier take on one of our favorite meals in the world. This is only a 340-calorie dish, which isn’t bad for a heaping bowl of mac & cheese! Thanks to the cauliflower and brown rice pasta, the meal is loaded with both calcium and vitamin A.
With all that said, this is more than just a healthy alternative to your classic macaroni dish. This is an appealing meal with some very interesting flavor combinations. While this dish is made with cheddar cheese, other ingredients, like butternut squash, give the dish a more unique flavor. A sprinkling of panko crumbs adds some nice texture, and the cauliflower is delicious when covered in cheese.
If you’re in the mood for classic mac & cheese, you can find better options in the freezer aisle. There are superior choices if you’re trying to stay away from carbs.
