Vegetables Simply Dressed with Garlic and Herbs

The Freezer Meal Frenzy staffers have never struggled to eat our veggies. In fact, more often than not, veggies are the highlight of our meal. Ideally, we like to enjoy a variety of veggies when we eat. Trader Joe’s Roasted Vegetables Simply Dressed with Garlic and Herbs offers an amazing assortment of veggies, and all of the veggies come pre-seasoned. Add in an entree, and you have a terrific meal on your hands!

Unfortunately, we ran into some problems as soon as we took this dish out of our freezer. Even though we found these veggies in the Trader Joe’s freezer section, the box says that they should be kept refrigerated. We solved the problem by cooking the dish for another three and a half minutes, but we’re not sure we got the best possible results.

This is certainly a terrific assortment of veggies. A lot of our favorites are here, including red bed peppers, sweet potatoes, and zucchini. We were a little hesitant about the Brussels sprout at first — Brussels sprouts can taste funky when poorly prepared — but it turns out there was nothing to worry about. Everything tasted great, and the light seasoning of olive oil, garlic, rosemary, salt, and pepper did a lot to bring out the natural flavor of these veggies.

We weren’t totally thrilled with the texture of our vegetables; the yellow squash was a little mushy and some of our potatoes were actually a bit hard. However, we suspect that we had these issues because our veggies were microwaved for more than six minutes.

The real problem here is the serving size. Trader Joe’s says that there are five servings of veggies here, and we can’t see how that could possibly be true. You could easily split this up into three servings with the right entree, but five servings is too much. Trader Joe’s says that a serving size is half a cup, which is barely enough for a potato!

Trader Joe’s Roasted Vegetables Simply Dressed with Garlic and Herbs should definitely be kept in the refrigerator, not the freezer. Even though we ran into a few problems while heating up these veggies, they’re quite tasty and they make for a great side dish. If you decide to pick up some of these veggies, make sure you pay close attention to the Nutrition Facts. The servings sizes are pretty deceptive!
