Bountiful Life Greens & Protein Pesto Scramble

We’re big breakfast eaters at Freezer Meal Frenzy — or, more accurately, we’re big fans of frozen breakfast food. We don’t always have time to enjoy “the most important meal of the day,” so maybe the term “big breakfast eaters” is a bit of an exaggeration.

Either way, we’re always excited when we spot new breakfast products in the freezer aisle. Bountiful Life by Oprah offers an assortment of breakfast scrambles that are allegedly inspired by Oprah’s bougie Hawaii garden. That sounds sort of interesting, so we decided we’d give the Bountiful Life Greens & Protein Pesto Scramble a try.

This is a microwavable breakfast bowl, and as such, it’s pretty low effort to heat up. Simply toss it in the microwave, give it a stir, toss it back in, and wait for it to cool. If you’re a regular Freezer Meal Frenzy reader, then you probably already know the drill. We will say that the protective film on top of this bowl is very easy to peel off (sometimes, peeling back that film can be a real chore).

This breakfast bowl looks a little watery in the image above, but we promise that this isn’t actually a bowl of egg soup. This is loaded with low-fat parmesan cheese, which is slightly translucent when melted. Beneath the gooey cheese, you’ll find all kinds of veggies, including yellow peppers, zucchini, and red potatoes. There are also some fluffy chunks of scrambled egg whites.

Even though there are a lot of ingredients we like here, we can’t help but feel like something is missing. The texture of the eggs is fine, but they’re seriously lacking in flavor. Unless you manage to get some cheese and veggies on your fork, they’re basically tasteless.

We also feel like there isn’t really enough of any one ingredient, save for the melted parmesan cheese. There’s not enough egg, not enough of any one veggie, and there’s definitely not enough pesto. This is a 200-calorie breakfast bowl filled with healthy ingredients, and you can really taste how diet-friendly it is. This contains 15 grams of protein, but it didn’t keep us full for long.

The Bountiful Life Greens & Protein Pesto Scramble is low in calories, and it makes for a decent breakfast. Still, we can’t help but feel like it’s lacking a few essentials. If it had a little more seasoning — and a lot more egg — this could become one of our breakfast favorites. As is, we’ll probably stick with tastier frozen breakfast options.
