The orange carrot may be the standard today, but a few centuries ago, virtually all carrots were purple. Orange carrots were cultivated from mutant purple carrots in the late 16th century. But no matter what shade our carrots are, the Freezer Meal Frenzy staff enjoys them quite a bit. That’s exactly why we couldn’t wait to dig into the Trader Joe’s Colorful Carrot Coins.

Like most of Trader Joe’s bagged frozen veggies, this is pretty easy to cook on the stove! A few of our carrots stuck together, but we were able to break them apart and heat our carrots evenly. It took around five minutes to cook all our carrots. If you’re scared of the stovetop, or if you don’t have access to a cooktop, you can easily heat these up in the microwave.

Trader Joe’s says that these carrots are lightly seasoned, and we’re inclined to agree. They definitely didn’t go crazy with the olive oil, thyme, sea salt, and black pepper. If we didn’t know any better, we’d say that these carrots were plain!

However, the natural flavor of the carrots is on full display here. The carrot coins are thicker and juicier than the average carrot you’d find in the produce aisle, especially the purple carrots — they have a naturally sweet flavor with a terrifically peppery aftertaste. We also love the earthy, parsley-like flavor of the yellow carrots.

We chose to eat these carrots in a big bowl with some frozen quinoa, but you can serve them in all sorts of ways. We think they’d be an amazing way to bulk up a soup, and they’d be a great addition to a stir fry. Since Trader Joe’s keeps it simple with the seasonings, it’s easy to customize these carrots and make them work with any dish. Even when the carrots are fully cooked, they still keep their crunch.

Trader Joe’s Colorful Carrot Coins are a perfect way to add some beta carotene and carrot flavor to your diet. Orange carrots might not be hard to come by these days, but this carrot blend allows you to enjoy carrots of all types. This is a pretty simple frozen veggie dish, but that simplicity isn’t a bad thing — in fact it makes this an extremely versatile frozen food.
