Cheese is a core component of many Mexican dishes. From queso to quesadillas, many Mexican favorites are loaded with dairy. If you’re trying to avoid dairy, but are still in the mood for Mexican, Amy’s Organic Mexican Inspired Veggies & Black Beans might be a good option. This tasty, veggie-filled dish relies on cashews for a creamy flavor.

Like many of Amy’s frozen meals, this is a fast and easy dish that doesn’t take much effort to make. If you opt to heat this in the microwave, it’ll be ready to eat in under five minutes. Baking this in the oven will take a little longer — about 40 minutes — but it’s still a pretty simple process. We were pretty hungry when it came time to review this dish, so we took the microwave route. This cashew-heavy dish is completely free of dairy products, but you probably wouldn’t notice that without looking at the box. The chipotle sauce is incredibly creamy, and if we didn’t know any better, we’d swear we could taste the cheese in this sauce. This is a vegan substitute that really knocks it out of the park. It tastes amazing, especially when paired with the black beans.

Although we’re big fans of the sauce, it isn’t the only thing that we love about this dish. The veggies aren’t heavily seasoned, and they aren’t anything fancy, but they’re still incredibly tasty. The sweet potatoes are fire-roasted, which gives them a slightly smoky flavor, and we absolutely love the texture of the yellow squash. We actually didn’t notice that the rice was made from cauliflower until we took a closer look at the box. We think even pickier eaters would enjoy this veggie-filled dish.

The Amy’s Kitchen Organic Mexican Inspired Veggies & Black Beans is a step above many of the other dairy-free frozen dishes on the market. The cashew sauce is amazing, and the veggies and cauliflower rice are pretty great too. This may not be authentic Mexican food, but it’s definitely a dish that’s worth trying.
