Amy’s Enchilada with Spanish Rice & Beans Review

Amy's Enchilada with Spanish Rice & Beans

If you’re the kind of person who still feels hungry after eating a typical frozen meal, Amy’s Whole Meal line might be up your alley. The Enchilada meal contains a vegetable enchilada with sides of Spanish rice and pinto beans, making this feel like a meal you might go to a restaurant for rather than something you heat up in your microwave at home.

The enchilada is not doused in sauce, like many of the other frozen enchiladas we’ve tried. This isn’t necessarily a problem, since the shell has an authentic taste and it’s filled with corn, black beans, bell peppers, zucchini, and tofu. It’s quite tasty, though the shell was a little bit chewier than we’d have liked.

The sides are great. The beans have a nice taste to them, which was far superior to the refried mush we were expecting. The Spanish rice is a bit spicy and has corn mixed in. We actually found it to be the perfect finisher, since it soaks up whatever delicious juices are leftover in the tray from the enchilada itself.

This meal is slightly more filling than your average frozen meal, yet it’s surprisingly lean at only 330 calories (70 from fat).

If you’re looking for a frozen food that will fill you up without burdening you with high-calorie guilt, Amy’s Enchilada Whole Meal should definitely be on your radar. It’s a surprisingly high-quality meal with a surprisingly low amount of fat.
