Amy’s Mexican Casserole Bowl isn’t the healthiest frozen choice. It contains 16 grams of fat, and it’s heavy on the carbs as well. Still, this is a meal we keep coming back to; there’s just something about this dish that we adore.

Our staff is a big fan of cheese, and that’s something this bowl offers plenty of. Neither the box picture or the picture below are really an accurate representation of how much cheese this dish offers. You’ll find a gooey, delicious stand of cheese in almost every bite.

Amy’s enchilada sauce is also a big hit. It has the perfect amount of kick for a dish like this. We’d love to put the same sauce on our homemade enchiladas; it would do a lot to enhance the flavor.

However, the thing that we love most about the dish is probably Amy’s corn masa. It’s so simple, but it tastes so different from the traditional tortilla chips that you’d normally find in a dish like this. It combines perfectly with the corn, beans, and sauce.

This is a simple Mexican bowl that has taste to spare. If you’re not put off by this bowl’s high fat content, you should definitely give it a try.
