We were a little bit nervous when Amy’s Black Bean Vegetable Enchilada came out of the microwave. The thick, brown enchilada sauce doesn’t look very appetizing, and the appealing vegetables that appeared on the box were nowhere to be found. Thankfully, our fears were unfounded. This wasn’t our favorite Amy’ dish, but it was a tasty meal.

You can’t see the vegetables in our pictures, but they’re definitely there. As is the case with most Amy’s dishes, the vegetables taste incredibly fresh. While the cover image showcases beans and corn, the highlight of this meal is the zucchini. It paired perfectly with the enchilada sauce.

We were slightly surprised by how spicy this dish was; the sauce has some real kick to it. The enchilada filling contains green chilies, which kicks the spiciness up a notch. You shouldn’t heat up this meal unless you have a beverage on hand; you’re going to need it!

If you’re drawn to the low calorie count on the label, you should look closer. Even though these enchiladas are clearly designed to be eaten together, the serving size is just one enchilada. Still, 320 calories for a single freezer meal isn’t all that bad. If you’re okay with spiciness and have looked over the labels, this is a dish worth trying.
