Sweet Earth Basil Pesto Lasagna

When we spotted Sweet Earth’s Basil Pesto Lasagna in the frozen foods section, we couldn’t help but get excited. We love a good frozen lasagna, and we love portabella mushrooms even more. To say that we had high expectations for this dish would be an understatement. When we stuck this in the microwave, we were expecting greatness. What we got was a pretty decent meal.

While this lasagna isn’t the masterpiece we were hoping for, it’s still pretty appetizing.

A lot of pesto dishes overdo the basil, but this pesto gets things just right. The lasagna noodles are easy to cut into and chew, which is a rare quality in a microwave dish. And, as expected, the mushrooms are sublime.

So what went wrong with this frozen food?

Part of the problem is that there simply aren’t enough portabella mushrooms. Although the lasagna on the box is loaded with mushrooms, the actual lasagna is pretty stingy. The other issue is the cheese. A lasagna doesn’t need loads of cheese to taste great, but this dish definitely could have used more mozzarella. At times, it tastes less like lasagna and more like plain noodles in a pesto sauce, which isn’t really what we signed on for.

Don’t get us wrong; this isn’t a bad meal. It’s a little bland, sure, but we’d willing to give it another try. Ultimately, our expectations were just too high. This lasagna couldn’t live up to the picture-perfect lasagna on the box, and that’s what made it a disappointment.
