We’re huge fans of the Amy’s Kitchen breakfast line-up. We’d eat Amy’s Tofu Scramble every day if we could, and we frequently find ourselves craving their gluten-free burritos. With the introduction of the Breakfast Country Bake, we have a new morning meal to look forward to.

If you enjoy Amy’s Meatless Veggie Sausages, you’re in for a real treat. They’re the centerpiece of this meal. While we enjoy the sausage on its own, it’s even better here. The spinach, potatoes, and scrambled tofu all pair perfectly with these sausage chunks. The cheddar cheese doesn’t hurt either.

Some frozen food companies are stingy with their cheese, but that usually isn’t a problem with Amy’s Kitchen. This dish has the perfect amount of cheese; it gives the meal a nice creamy flavor. However, we do wish there were a little more tofu. We love Amy’s scrambled tofu, and a larger of helping would have made this meal even better.

We were especially impressed by the quality of the potatoes in this dish. We’ve had microwaved potatoes that were mushy or overly chewy in the past. Although we chose to heat this dish up in the microwave, the potatoes tasted like they were just roasted in the oven. They’re also seasoned very well.

If you love Amy’s breakfast food as much as we do, you should look for this meal in your freezer aisle. It might just become a new breakfast staple.
