Good Food Made Simple Chipotle & Poblano Breakfast Enchiladas

When we first stumbled upon Good Food Made Simple’s Chipotle & Poblano Breakfast Enchiladas, we expected this dish to be very similar to their Huevos Rancheros Breakfast Enchiladas. But now that we’ve tried them both, we have to admit that they actually don’t have all that much in common besides the enchiladas part.

The Chipotle & Poblano version is much creamier, skips the salsa altogether, and focuses much more on the egg content. Plus, when you peel back the enchilada shell, you’ll find large chunks of potatoes resting in a bed of creamy gravy sauce instead of white rice.

Our staffers couldn’t seem to agree on which version was spicier. Truth be told, both versions are far spicier than we would have expected, and both will clear out a person’s sinuses.

The ingredients individually are great here. The enchilada shells have that authentic taste and texture, though they don’t necessarily hold their consistency very well in the microwave. The potatoes are rich with flavor, and the gravy is delicious.

Believe it or not, all of this clocks in at about 280 calories. Not bad if you’re on a diet!

Good Food Made Simple’s Chipotle & Poblano Breakfast Enchiladas make a great lunch. They’re spicy enough that we hesitate to recommend them as a breakfast food though. The spice level is a little much for an early morning meal.
