Mushrooms are a polarizing ingredient. Some people can’t stand mushrooms; these people are apparently repulsed by their texture and flavor. We at Freezer Meal Frenzy, on the other hand, can’t get enough of them. If a dish has mushrooms in it, we want to try it. If you’re anything like us, Amy’s Brown Rice & Vegetables Bowl will be right up your alley.

This dish definitely isn’t exactly photo-friendly. We weren’t sure what to expect when we took it out of the freezer. Thankfully, our fears vanished as soon as we took our first bite. The rice, mushrooms, and vegetables are all cooked to perfection. Amy’s has really mastered the art of frozen broccoli  — their broccoli always tastes like it was freshly steamed.

This is a fairly simple dish, but the chunks of organic tofu make it a lot more interesting. The tofu is smothered in a sesame tahini sauce that gives it a nice meaty taste. It’s the perfect compliment for the organic mushrooms. Speaking of mushrooms, this meal is loaded with them. We had a mushroom in almost every bite. It’s a mushroom lover’s dream come true.

If you’re looking for a simple, light and healthy vegan meal — and you don’t mind mushrooms — this is the meal for you. It’s surprisingly filling for a 260 calorie meal, and there’s nothing bland about it. This meal may not be for everyone, but it’s definitely a dish we’ll be trying again.
