Even though the Freezer Meal Frenzy staff has never shied away from carbs, lately we’ve been loving low-carb, keto-friendly meals like the Trader Joe’s Riced Cauliflower Bowl. Cauliflower is a surprisingly versatile vegetable, and we definitely enjoy it in riced form. So start with some cauliflower rice, then add in ingredients like sweet potatoes, chickpeas, and baked tofu, and you’ve got a pretty great meal on your hands!

It took us about six minutes to prepare this cauliflower bowl, which is on the long side for frozen foods. That said, the process was very simple. This is definitely the kind of frozen meal you can take with you to work. Be warned: the nutty smell of the tahini sauce might leave you drooling as you wait for your meal to finish heating.

Now, the ingredient we were most excited about here was the sweet potato, and it doen’t disappoint. It’s got a slightly soft texture to it that makes it taste like it was roasted in the oven. The combination of tahini sauce, chili powder, and soy sauce gives the sweet potato a terrific sweet and savory flavor; we savored every last bite.

Even though the sweet potato is the highlight, every ingredient in this meal is impressive. The baked tofu is nice and firm, and it’s certainly not lacking in flavor. The cauliflower doesn’t really taste like rice, but it has a crispy texture to it that’s very enjoyable. The marinated chickpeas are bursting with flavor, and the roasted onions are wonderfully aromatic.

We definitely loved this meal, but we do have a few small complaints. Even though the full meal clocks in at 280 calories, we didn’t find it to be all that filling. The chickpeas and the tofu should give the meal plenty of protein, but the meal just didn’t leave us feeling satiated. We also wish Trader Joe’s had been less stingy with the kale. Our bowl only had a few tiny chunks of kale; it was hard to notice that it was there at all.

The Trader Joe’s Riced Cauliflower Bowl does have some minor issues, but it’s still a dish we can heartily recommend. Whether you’re looking for keto-friendly frozen meals or are simply a fan of good food, this is a high-quality meal that will satisfy your sweet potato — and cauliflower — cravings.

I am eating this dish now and until I read your review, I didn’t know it was supposed to have kale in it! It is tasty but mine only has a trace amount of kale.

I love these bowls.
I put an over easy egg on top and serve with a slice of raisin Ezekiel toast. The combination is perfect and filing meal.
