The Freezer Meal Frenzy staff tries to follow a healthy diet, but we can’t resist the enticing allure of cheese. It doesn’t matter if it’s cheddar, swiss or fontina. We’ll walk through fire — or try mediocre meals — for just about any cheese. As the name suggests, Evol Three Cheese Mushroom Risotto contains three different types of cheese, and despite what we said earlier, this is definitely a step above mediocre.
We weren’t quite sure what to make of this dish when it came out of the microwave. It didn’t look anything like the perfectly prepared risotto on the cover of the box. In fact, it looked a lot like canned cream of mushroom soup. Luckily, this meal tastes better than it looks.
All that goop you see in the picture above is cheese sauce. Once the meal has been properly stirred, you’re left with a mac & cheese-esque dish with big chunks of meaty mushroom. The caramelized onion gives the sauce just a hint of sweetness. The starchy rice tastes great covered in cheese sauce; it’s a great substitute for macaroni noodles.
If you’re looking for an authentic Italian risotto, you’ll want to try Trader Joe’s Asparagus Risotto or Amy’s Mushroom Risotto. However, if you’re in the mood for mac and cheese, or are simply looking for something fast and easy, the Evol Three Cheese Mushroom Risotto isn’t a bad option.
