Sometimes, the craving for barbeque sauce can be a powerful motivator. For us, this particular craving lead us to the Stouffer’s Meatloaf with Sweet Chipotle Barbeque Sauce. Now, frozen meatloaf isn’t always a winner — the Lean Cuisine Meatloaf with Mashed Potatoes, for example, is pretty bad. So we went into this one with tampered expectations.

We’ve mentioned in the past that Stouffer’s frozen meals can take a bit more cook time than your average frozen meal, and this meatloaf happens to be a real doozy. You’ll need to toss this into the microwave for five minutes, stir the sauce and corn, then cook for an additional three minutes. That’s right — this meal will spend eight entire minutes in the microwave.

For anyone who’s eaten a lot of Stouffer’s meals, this actually isn’t all that unusual. Both the Garlic Parmesan Mac & Cheese and the Lasagna with Meat and Sauce have eight-minute cook times as well. Still, if you decide to cook up one of these, we hope you’re the patient type!

We should also warn you to be cautious with this. It comes out of the microwave extremely hot, with the barbeque sauce bubbling and the corn sizzling. Give this one a good five minutes or so to cool off before you dive in — we certainly don’t want any of our readers burning their mouths.

The barbeque sauce is delicious — it’s rich in flavor, both sweet and smoky. Don’t expect this to be especially spicy, though it does have a little bit of what we’d call a tanginess.

And there’s no shortage of sauce here — the meatloaf is absolutely drenched in it. Our one complaint about the sauce, however, is that it’s surprisingly runny. We would have preferred something a little thicker and stickier.

Unfortunately, the meat is fairly generic. It doesn’t taste very good, and the texture is a bit too gristly. It’s a good thing the sauce is so good, because it prevents this from being an otherwise unappetizing meal. We suggest that you chop the meat into the smallest pieces you can to maximize the amount of sauce per bite. (No matter what, we’re quite certain you’ll end up with quite a bit of leftover sauce when you’re done eating the meatloaf portion of this dish.)

This frozen meal also comes with a side of corn that’s been seasoned with chipotle. It has some of that same smokiness that the barbeque sauce has, but it lacks the sweetness. Of course, if you want to sweeten up your corn, you can mix it into the leftover barbeque sauce, which, as we mentioned earlier, you’re sure to have plenty of.

The nutrition info on the package considers a full box to be a single portion. Stouffer’s does sometimes break their boxes into two portions, so we appreciate the transparency here. One box contains 400 calories (150 from fat) and 850 mg of sodium, so this is hardly the most diet-friendly frozen food on the market.

The Stouffer’s Meatloaf with Sweet Chipotle Barbeque Sauce is a fairly mediocre frozen meal that’s redeemed by some delicious barbeque sauce. We would have loved an actual loaf of meat instead of a low-quality patty that reminds us of something we would have gotten at the cafeteria back in high school.
