The first time we spotted Amy’s Ravioli with Spinach & Vegan Ricotta Cheeze, we assumed that we’d tried it before. This meal is a vegan take on Amy’s Spinach & Ricotta Cheese Ravioli, and the two dishes appeared to see extremely similar. But on closer inspection, we realized they have some notable differences. We decided to sample the vegan take on this meal to see how it compared to its cheesy counterpart.
We thought that the original spinach ravioli was an appealing take on a basic pasta dish, and we think that the same thing is true of this meal. Even though it’s made with dairy-free cheese, there’s nothing particularly unusual about flavors on display here. If you’re a fan of ravioli, you’ve probably had similar dishes many times before.
If we didn’t know that this was a vegan pasta dish, we would have assumed that it was made with actual cheese. The vegan ricotta cheeze is virtually indistinguishable from the real deal, especially when it’s blended with spinach. The cheeze is made with coconut milk, which gives it an appealing creamy flavor.
That said, this isn’t necessarily a dish that will satisfy your cheese cravings; the portions of cheeze are pretty scant.
As is the case with many of Amy’s pasta dishes, the real highlight of this meal is the tomato sauce. Even though it looks a little dry in our image, the actual sauce is smooth and flavorful. It’s a terrific mix of sweet and savory spices. There’s a mild hint of spiciness that compliments the ravioli noodles very well.
