If you’ve never heard of the Lunds & Byerlys brand, don’t feel too bad about it. L&B is a chain of upscale grocery stores, and it only exists in the Minneapolis area. Since Freezer Meal Frenzy is located in the area, we have access to several L&B stores. This is fortunate for us because Lunds & Byerlys has their own line of frozen food, and many of those foods are amazing. Their Roasted Vegetable Lasagna, for example, is one of the best frozen lasagnas we’ve ever tried.
So today we’re excited to be sampling another frozen food from the L&B brand: the Lunds & Byerlys Chicken Breast Tenders in Lemon Artichoke Sauce & Lemon Couscous.
While we’ve been cooking most of our L&B foods in the oven, this one is designed for the microwave, which we really appreciate. In fact, the microwave is the preferred cooking method for this dish. Simply poke some holes in the plastic and heat the dish for five to seven minutes. We went with five minutes and our meal came out piping hot, so those two extra minutes might not be necessary, depending on the power of your microwave. The first thing we wanted to know when we pulled this meal out of the microwave was where is all the chicken? If you look at our picture above, you’ll probably wonder the same thing. The answer is that it’s buried beneath a layer of veggies. Those veggies are mostly artichokes, red bell peppers, and slices of zucchini. All of them are wonderful, but the real kicker is the lemon artichoke sauce that they’re drenched in. This stuff is great. It’s also quite spicy — spicy enough to clear our sinuses — which we weren’t expecting.
There actually isn’t a ton of chicken here; we had three fairly small slabs of the stuff in our dish. What’s there is actually very delicious — it’s juicy and succulent, and since it’s buried in the veggies, it soaks up a lot of that spicy sauce. We would have just appreciated maybe one or two more morsels.
A good portion of this meal — just over half, by our estimates — is the Israeli spinach couscous. While we typically enjoy both spinach and couscous, we found this to be the weakest part of the meal. It’s not bad by any means; it’s just that the couscous is a little too mushy and the spinach flavor is a little overpowering for our tastes.
While L&B frozen foods tend to be big on flavor, they also tend to be big on calories. This meal is an exception, however with 280 calories (60 from fat). That makes this a low-guilt frozen food.
Lunds & Byerlys Chicken Breast Tenders in Lemon Artichoke Sauce & Lemon Couscous is quite tasty. If you’re looking for a high-end frozen meal that’s got a great flavor and a bit of kick, this might do the trick. Of course, you have to be in the Minneapolis area to find it.
