We’re big fans of Amy’s Thai Green Curry, so we were pretty psyched to see that this dish was a part of Amy’s Meals For Two line. Amy’s Meals For Two – Thai Green Curry probably won’t feed two people without a side of some sort, but it’s incredibly tasty.
Although this meal does come with microwave instructions, we decided to heat it on the stove. We didn’t have to do much besides toss the contents of the bag in a pan, cover it, and give it the occasional stir. In about 10 minutes, we were left with a perfectly cooked curry.
The only real complaint we had about the smaller version of this meal is that it looks like a pile of slop. That’s not an issue here. The curry sauce is evenly spread over the rice, and the veggies are all bright, fresh, and colorful.
If you’ve tried Amy’s curry before, then you know how tasty it is. The sauce is sweet with an undercurrent of spiciness, and the coconut milk gives it a rich and creamy flavor. The selection of vegetables here, from yellow zucchini to sweet potatoes to red bell peppers, is fantastic. The chunks of pressed tofu also add flavor and texture to the meal.
Whether you’re serving one or two people, we strongly recommend that you try Amy’s Meals For Two – Thai Green Curry out. Just be careful if you’re eating alone. This curry is addictive, and you could easily polish off an entire 660-calorie bag in one sitting.
