Portobello mushrooms may have a fancy name, but they’re far less exotic than they seem. They’re just crimini mushrooms that have continued to ripen past harvest. Still, we think they taste amazing, and we’re always happy to eat things like the Evol Portabella & Goat Cheese Ravioli (Meals for 2).
This dish isn’t totally new to us; we reviewed the single-sized Evol Portabella & Goat Cheese Ravioli a while back. However, this larger version of the dish is cooked on the stovetop instead of in the microwave. But don’t think that makes it tricky to cook; this is still a quick and easy meal. We tossed it in a pan, added some olive oil, and had a finished meal ready in under 10 minutes.
In our original review, we described the meal as “full-flavored and luxurious.” We’d say that this version of the dish is even better. The ravioli is stuffed to the brim with rich and tart goat cheese. The slices of mushroom are meaty and juicy, and the light-yet-creamy basil sauce takes this meal to the next level.
As with many meals for two, this dish might not necessarily feed two people. If you’re hungry and don’t have any sides, one person could easily polish the entire meal off. If you’re ravenous, you should know that a bag contains 840 calories of food (compared to 390 calories in the smaller meal). It’s delectable, but it’s not remotely diet-friendly.
You might have some regrets after finishing the Evol Portabella & Goat Cheese Ravioli (Meals for 2), especially if you’re dining alone, but you’re going to love it while you’re still eating. It’s simple to cook, but it’s also an absolutely delicious meal that wouldn’t be out of place at a restaurant.
