The Freezer Meal Frenzy staff skips breakfast more often than not, but we still love breakfast food. From omelets to pancakes to tofu scrambles, we’ll gladly eat breakfast food at any time of day. The Bountiful Life Superfood Veggie Scramble is apparently free of artificial flavors, preservatives, and dyes (if you believe the marketing copy on the package), making it a healthier frozen breakfast option.
If you are planning on eating this first thing in the morning, you shouldn’t have much trouble cooking it up. This is a microwavable dish that can be fully heated in about 4 minutes. We followed the instructions on the box and didn’t have any issues.
Sometimes frozen eggs can wind up with a rubbery texture after microwaving, but that doesn’t seem to be a problem here. The eggs don’t quite taste like they were freshly cooked, but they’re appealingly light and fluffy. We don’t have any complaints about the veggies either, although we do wish there was a little more kale here. All in all, this is a pretty solid breakfast bowl, especially when you consider there are 14 grams of protein in a 240 calorie bowl.
We do, however, wish this bowl had a little more flavor to it. It isn’t bland, per se, but it is pretty basic. It’s essentially an assortment of eggs and veggies with just a light smattering of cheese. The ingredients list says this contains “spices,” but there’s not much in the way of seasoning here. A little bit of hot sauce or a sprinkling of pepper could go a long way towards making this a better dish.
The Bountiful Life Superfood Veggie Scramble didn’t blow us away, but we do think it’s a solid breakfast dish that really delivers some bang for your calorie buck. If you’re looking for a reasonably healthy frozen breakfast that will tide you over until lunchtime, you should definitely check this meal out.
