Lunds & Byerlys Bacon & Cheese Egg Bake

If you live outside of Minnesota, then we can’t really blame you if you’ve never heard of Lunds & Byerlys. This chain of upscale grocery stores exists exclusively in the Twin Cities area in Minnesota. The Freezer Meal Frenzy office is located in Minneapolis, which puts us right at the heart of L&B land. This means we have easy access to L&B’s entire line of frozen food — a fact that we take advantage of quite frequently.

Today we’re sampling another item from L&B, the Lunds & Byerlys Bacon & Cheese Egg Bake. This breakfast food really caught our eye, especially since we tried — and loved — the Sausage & Potato Egg Bake.

One of the less fortunate things about this particular meal is its long cook time. Sure, you could microwave it for 4 to 6 minutes, but the preferred cooking method is to use a conventional oven, which can take more than an hour. We bit the bullet on this and used the oven, since that’s the method that’s recommended by the package. Now, that’s an excruciating wait, especially if you have a mean morning hunger, but what comes out of the oven looks and smells absolutely incredible.

The eggs have a creaminess that really sells them — this is likely due to the fact that the main ingredient is whole milk. There’s also a blend of heavy whipping cream, sour cream, and swiss cheese. Yes, this thing is absolutely bonkers with dairy, but we midwesterners are farm kids at heart so we find this to be quite lovely. If you heat it in the oven, like we did, the edges end up a little bit crispy as well, which is wonderful.

The ham is just alright. It’s a little dry and tough, which is odd since the eggs are so moist. There’s hardly any of it in here, though. There was one bite that was loaded with the stuff, but it was all concentrated in that one area — the rest of the egg bake was relatively ham-free. We would normally complain about that, but since it’s not very good, the skimpy ham portion is actually a positive here.

You’ll also find some veggies scattered about, such as green peppers and yellow onions. The real treat, however, is a layer of cheddar cheese at the bottom of this dish. It’s almost like a thin crust made entirely of cheese, and it’s a delightful surprise. We applaud L&B for this stroke of genius — it really makes this a wonderful breakfast from start to finish.

Lunds & Byerlys isn’t great at making their food diet-friendly. In fact, we doubt they care much about dieters at all. This egg bake, for example, contains 530 calories and 1,160 mg of sodium. That will definitely contribute to your winter layer of fat — which is fine if you’re a true midwesterner. If you’re on a diet, though, you’ll probably have to say “no” to this frozen breakfast.

The Lunds & Byerlys Bacon & Cheese Egg Bake is a delicious, dairy-heavy, calorie-loaded breakfast food for those looking for a midwestern farm-style feast. The ham isn’t great, but everything else in this meal is absolutely incredible. We’ll definitely be eating this again as soon as possible.
