Cheese isn’t quite a health food, but it is a solid source of calcium and B12. More importantly, it’s absolutely delicious. We’re always up for trying cheesy frozen dishes, such as the Trader Joe’s Cheese Enchiladas, which we’re happily reviewing today.
Of course, regular readers may notice that we’ve actually reviewed these enchiladas before. However, since they got a new, brightly colored package, we figured it was a good time to revisit these tasty treats. Plus, the last time we reviewed these we cooked them in the oven, and we thought we’d take a shot at microwaving them to see if they turn out any better (or worse) that way.
Heating this in the microwave will require a little bit of extra effort on your part; it needs to be cooked at 50% power and then heated at full power. In spite of that, it’s still a simple and speedy process. If you don’t feel like finagaling with your microwave’s power settings, you can always heat this in the oven.
Back when we initially reviewed these enchiladas, Trader Joe’s was trying to claim that there were two servings in this small container. They’ve corrected this error and now accurately describe this as a single-serving dish. They’ve also somehow cut some of the calories out of this meal; they’ve bumped it from 580 calories down to 460.
The food scientists at Trader Joe’s might have reduced the calorie content of these enchiladas, but they didn’t get rid of any of the cheese. These enchiladas are still stuffed to the brim with gooey, tasty cheddar cheese. The corn tortillas are soft enough to slice through with a fork, but they still have a bit of crunch to them, and the mild enchilada sauce is full of flavor.
The Trader Joe’s Cheese Enchiladas may have fewer calories now, but they taste just as good as they did before they were repackaged. If you’re in the mood for some cheese, and you’re looking for an easy way to satisfy those cravings, we’d definitely recommend picking these enchiladas up.
