Evol Plant-Based Butternut Squash Curry Bowl

The Freezer Meal Frenzy staff loves butternut squash, which is why it’s an ingredient we always keep an eye out for when we’re writing reviews. From ravioli to risotto, we’ll eat squash in just about anything! We also love curry, which is why we were pretty excited when we noticed the Evol Plant-Based Butternut Squash Curry Bowl.

This frozen meal is a breeze to make. All you have to do is pop it in the microwave for around five minutes and it will be ready to go. It may look a little dry when it comes out of the microwave, but once you give it a good stir, the curry sauce will cover everything nicely.

We weren’t expecting this curry to be super spicy, but we were slightly surprised by how mild this dish was. It apparently contains both serrano and jalapeno peppers, but it doesn’t really have any heat at all. Thankfully, it isn’t lacking in flavor. The curry sauce contains tomatoes, ginger, and lime, which are wonderful complements to the butternut squash.

Chickpeas are a terrific protein source, which is why we were happy to see that this dish is absolutely loaded with them. It contains 12 grams of protein in total, making it pretty satiating. It also contains 38 grams of carbs, so you might want to be careful if you’re watching your carb intake. This is made with riced cauliflower rather than actual rice, so it’s not as carb-heavy as it could be.

The Evol Plant-Based Butternut Squash Curry Bowl isn’t quite the dish of our dreams. We generally prefer spicier curries, and this one is a little too mild for our liking. Still, if you don’t mind the lack of heat, we think you’ll find this curry bowl to be surprisingly satisfying.
