We want to make sure everyone can enjoy tasty microwavable meals, no matter what their dietary preferences are. The Amy’s Vegan Mexican Casserole with Cheeze is a dairy-free alternative to a meal we’ve already reviewed and enjoyed.

Amy’s Kitchen meals are generally quick and easy to prepare, and that’s the case here. Toss it in the microwave for four or five minutes and it’s ready to go. While there are also oven instructions, heating your meal that way would take almost an hour. We can’t see why you wouldn’t opt for the microwave method if you have one available!

One of the best things about the original meal is that it’s absolutely loaded with cheese. You’ll find lots of vegan cheeze here, but the texture and flavor just can’t compare to the real deal. It doesn’t taste bad, and it doesn’t have a strong aftertaste, but it doesn’t taste like actual cheese, and that detracts from the quality of the meal.

Thankfully, there are no issues with the rest of the ingredients here. The enchilada sauce is mild but still flavorful, and the white corn masa really kicks the meal up a notch. It’s worth noting that the vegan version of this meal has fewer calories than the original, though not by much. This dish contains 360 calories, while the dish with real cheese contains 380 calories.

The Amy’s Kitchen Vegan Mexican Casserole with Cheeze isn’t quite as good as the original version of this meal, but it’s still pretty tasty. If you’re avoiding dairy and you’re looking for a yummy Mexican-inspired meal, this dish is worth trying. If dairy is a part of your diet, however, you’d be better off with the meal that contains actual cheese.
