Some people like mac & cheese. The Freezer Meal Frenzy team loves mac & cheese. We enjoy it in all forms, whether it’s plain and simple, loaded with toppings, or made without any actual cheese at all. So when we spotted the Amy’s Kitchen Mac & 3 Cheese with Cauliflower, we knew we had to give it a try.
Most of the Amy’s Kitchen meals we try are a breeze to prepare in the microwave, and this one is no exception. Our meal was ready to eat in under five minutes; we didn’t even have to pull it out to give it a good stir. If you prepare this in the oven, however, you’ll have to invest more time. It will take you around 45 minutes to heat everything up.
Cauliflower is a controversial ingredient in our offices. Some of our staffers can’t get enough of it, while others can’t stand the smell of it. If you find the scent of cauliflower to be off-putting, this might not smell that appetizing to you. If you avoid cauliflower because of the taste rather than the smell, however, you might find this dish to be a pleasant surprise.
This tastes like a creamy, classic bowl of mac and cheese with a little of crunch to it — we couldn’t really taste the cauliflower at all. The blend of aged white cheddar, parmesan, and Monterey jack overpowered it completely. What the cauliflower did add to the meal was an appealing texture. The cauliflower in this dish is slightly soft without being mushy, and that texture is absolutely perfect for a comforting dish like this one.
The Amy’s Mac & 3 Cheese with Cauliflower might not be enough to win over staunch cauliflower haters, but it makes a pretty decent effort nonetheless. The three-cheese sauce used in the dish is absolutely delicious, and some of our staffers thought that the cauliflower made the meal taste even better. This is a cheesy, slightly nutty take on mac and cheese that’s perfect for a cold or rainy day.
