Season's Choice Pumpkin Spelt Risotto

We’ve been on a tear with these fall foods this year. We dabbled with some of Trader Joe’s early fall releases, such as the incredible Pumpkin Cheesecake Croissants, and then we hit up our local Aldi for even more fall goodness.

Today, we’re checking out another one of Aldi’s frozen fall foods, the Season’s Choice Pumpkin Spelt Risotto. As it turns out, the website Finance Buzz put this food on its list of 12 things Aldi fans are flocking to this season. And if Aldi fans are going wild for it, then the Freezer Meal Frenzy staff needs to get our tastebuds on it!

This is super easy to cook. Simply tear open the bag and toss the contents into a pan with 1/4 cup of water. Cook on high for about four minutes, then continue cooking on low heat for three more minutes. It’s pretty fast for a stovetop affair, and it’s not difficult in the slightest. We’re going to be honest here: While this was cooking, we were feeling pretty uncertain about how it was going to turn out. We thought we might have added a little too much water (we added slightly more than the recommended amount) and that our risotto was doomed to come out runny. But, as you can see from the image above, this actually turned out pretty much perfect.

The spelt risotto here ends up just a little bit tough, so there’s a tiny bit of resistance when you bite into it. In fact, it almost reminds us of a wild rice in terms of consistency. We found this to be excellent.

And then there’s the creamy sauce. This stuff is fantastic. It has a subtle pumpkiny sweetness to it, but the creaminess of the whole thing brings it all together. The consistency is great, and the flavor is mostly great, though we do admit there was a little bit of an odd aftertaste to it. We’re not really sure what this was, but it’s the biggest complaint we have about this entire meal. It’s not super noticeable, but it’s noticeable enough for us to comment on it.

You’ve also got chunks of carrots, which complement the flavor incredibly well, and bigger chunks of pumpkin. Honestly, we would have probably diced those chunks just a little smaller if we had our way, but they still taste fine as part of the broader mix. If you single out a piece of pumpkin and eat it separately from the rest of this meal, it’s maybe a little too pumpkin-y for us, but if you just mix it into a forkfull of risotto, it really works well here.

Now, you might find the nutrition content to be pretty appealing, with just 130 calories and 300 mg of sodium. However, there’s a bit of deception at play here, as those numbers only account for 1/4 of the bag. And, if you look at our photograph a few paragraphs up, you can see that this makes a decent-sized meal for one. You could probably split it into two servings, but we found about 2/3 of the bag to be a good size for a lunch. Note that if you polish off the full bag in a sitting, you’re up to 520 calories and 1,200 mg of sodium. Those numbers look a lot less sexy now, don’t they?

The Season’s Choice Pumpkin Spelt Risotto is a really satisfying fall meal. There are a couple small tweaks we’d like to see made to this — we’d dice the pumpkin chunks smaller and see if we could do something about that aftertaste — but overall, we really enjoyed this.
